FROM THE EDITOR: Copenhagen, clean and civilized as it is, is always enjoyable, but before this last trip I hadn’t ventured very far into the Denmark countryside. This time I did just that, taking a 10-day tour around the country’s two main islands. The hotels I found there were a revelation. In Texas I wasn’t quite so lucky. While I didn’t unearth any new discoveries in Austin, I was absolutely taken with San Antonio’s Hotel Emma and The Inn at Dos Brisas, a rural sanctuary outside Houston.
