Set in a pastoral setting on the western coast of Jutland, this delightful 12-room hotel is housed within a sturdy red-brick structure with a thatched roof dating to 1790. Rooms are divided among three buildings: the original inn, the Jægerhuset (The Hunting Lodge) and the Staldgården (The Stable). All feature a sleek, modern décor and are furnished with comfortable Hästens beds. I recommend booking one of the two Junior Suites in the main structure or the Johannes Larsen Suite in the lodge. The latter features a comfortable seating area adorned with modern paintings and cocoa-colored area rugs, a freestanding tub that forms the centerpiece of the bath and views over the moor to Filsø lake. Helmed by chef Paul Cunningham, the two-star restaurant serves a superlative tasting menu that primarily sources its ingredients from the estate’s own kitchen garden and greenhouse. This hotel is closed from mid-December to mid-March.
